Tart cherries and floral vanilla transform plain kombucha into a fizzy, jewel-toned drink that tastes like something you'd pay way too much for at a boutique wellness café. The process starts with a quick honey-and-cherry syrup cooked down on the stovetop, which pulls out all that deep, fruity juice before it ever meets the kombucha. Once the syrup is strained and stirred together with vanilla powder, it gets bottled up with the kombucha for a short second ferment that builds natural carbonation right on your countertop. The result is bright, lightly sweet, and pleasantly tangy — the kind of drink that makes you feel like you actually have your life together. Since every ingredient here is straightforwardly plant-based and naturally free of any poultry-derived additives or broths, there's zero guesswork about what's in your glass. Chilling the bottles before serving slows the fermentation just enough to keep the bubbles lively without going overboard. Pour it over ice or straight from the bottle — either way, it's genuinely refreshing.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5–7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
