Tart cherries, raw honey, and vanilla powder come together in this homemade fizzy drink that tastes like something you'd pay way too much for at a specialty café. The flavor is bright, a little tangy, and just sweet enough — the kind of thing that makes plain water feel boring by comparison. Every ingredient here is exactly what it says it is, which matters when you're trying to avoid the synthetic flavor compounds that sneak into so many bottled beverages and store-bought kombuchas. The cherry syrup is made from scratch by gently cooking the fruit with honey until it releases its deep, jewel-toned juice, and the vanilla powder adds warmth without any extract blends or mystery additives. Bottling the kombucha with that syrup kicks off a second fermentation that builds natural carbonation right on your countertop — no special equipment, just patience and a good swing-top bottle. The result is a genuinely effervescent, fruit-forward drink that you made yourself, from ingredients you chose, with nothing artificial in sight.

Combine the tart cherries and honey in a small saucepan over medium heat. Cook, stirring occasionally, until the cherries soften and release their juice and the honey is fully dissolved, about 5–7 minutes. Remove from heat and let the mixture cool to room temperature, about 30 minutes.
Press the cooled cherry mixture through a fine-mesh strainer set over a bowl or measuring cup, pressing the solids firmly with the back of a spoon to extract as much juice as possible. Discard the solids. Stir the vanilla powder into the strained cherry juice until fully dissolved.
