Few drinks hit as satisfyingly as a homemade soda that actually tastes like the real thing. This one layers a rich, honey-sweetened cherry syrup with bright lime juice and cold sparkling water for something that looks stunning and drinks even better. The syrup comes together on the stovetop in just minutes β fresh or frozen cherries simmer down into a deep ruby liquid that you strain until it's silky smooth. Balancing that sweetness with fresh-squeezed lime keeps it from tipping into cloying territory, and the slow pour of sparkling water down the side of the glass keeps every sip properly fizzy. It's naturally free from nuts of any kind, built entirely from fruit, honey, and bubbles, so there's zero label-reading stress here. Serve it over ice with a few whole cherries and a lime wedge and it looks like something from a craft cocktail bar β no bartender required.

Combine the pitted cherries, water, and honey in a small saucepan over medium heat. Cook, stirring occasionally and pressing the cherries gently with a spoon, until the cherries have softened and released their juice and the liquid is a deep ruby color, about 5 minutes.
Pour the cherry mixture through a fine-mesh strainer set over a small bowl or measuring cup, pressing the solids firmly to extract as much syrup as possible. Discard the solids. Let the cherry syrup cool to room temperature, about 15 minutes.
