Fresh cherries simmered down with honey and a splash of water create a gorgeous, deep ruby syrup that tastes nothing like the artificial stuff β it's bright, fruity, and just sweet enough. A hit of fresh lime juice cuts right through the richness, and chilled sparkling water brings everything together in a glass that looks as good as it tastes. This is the kind of drink that feels fancy without requiring any bartending skills whatsoever. Since it's built entirely from fruit, honey, and sparkling water, there's zero concern about hidden animal-derived ingredients or anything that could trigger a sensitivity β just clean, simple components you can feel good about. The technique of pouring the sparkling water slowly down the side of the glass is a small but satisfying trick that keeps every sip perfectly fizzy. Garnish with a lime wedge and a few fresh cherries and you've got something genuinely impressive to set on the table.

Combine the pitted cherries, water, and honey in a small saucepan over medium heat. Cook, stirring occasionally and pressing the cherries gently with a spoon, until the cherries have softened and released their juice and the liquid is a deep ruby color, about 5 minutes.
Pour the cherry mixture through a fine-mesh strainer set over a small bowl or measuring cup, pressing the solids firmly to extract as much syrup as possible. Discard the solids. Let the cherry syrup cool to room temperature, about 15 minutes.
