Tart cherries, bright lime, and a cascade of bubbles make this homemade soda feel like something you'd pay too much for at a fancy cafΓ© β except you made it yourself in about twenty minutes. The cherry syrup is cooked down with just honey and water until it turns a gorgeous deep ruby, then strained smooth before it ever hits the glass. Fresh lime juice cuts through the sweetness with just the right amount of zing, and pouring the sparkling water slowly down the side of the glass keeps every sip perfectly fizzy. Tree nut allergies can make packaged drinks and flavored sodas a real minefield, but this one is built entirely from fruit, honey, and sparkling water β nothing hidden, nothing to second-guess. It's naturally refreshing and endlessly riffable for summer gatherings, backyard hangs, or just a Tuesday afternoon treat. Garnish with a few fresh cherries and a lime wedge and it looks almost too pretty to drink β almost.

Combine the pitted cherries, water, and honey in a small saucepan over medium heat. Cook, stirring occasionally and pressing the cherries gently with a spoon, until the cherries have softened and released their juice and the liquid is a deep ruby color, about 5 minutes.
Pour the cherry mixture through a fine-mesh strainer set over a small bowl or measuring cup, pressing the solids firmly to extract as much syrup as possible. Discard the solids. Let the cherry syrup cool to room temperature, about 15 minutes.
