Tart cherries, bright lime, and a cascade of bubbles make this homemade soda feel like something you'd pay way too much for at a trendy cafΓ©. The cherry syrup comes together in just minutes on the stovetop β fresh or frozen cherries simmer with honey and water until the liquid turns a gorgeous, deep ruby red. Straining out the solids gives you a silky, jewel-toned syrup that's all flavor and no fuss. A squeeze of fresh lime juice adds a citrusy punch that keeps the sweetness perfectly in check. Because everything here is made from scratch with whole, simple ingredients, you never have to second-guess a label or worry about hidden additives sneaking in. Pouring the sparkling water slowly down the side of the glass is the little trick that keeps every sip beautifully fizzy from first to last. Garnish with a few fresh cherries and a lime wedge and it looks as stunning as it tastes.

Combine the pitted cherries, water, and honey in a small saucepan over medium heat. Cook, stirring occasionally and pressing the cherries gently with a spoon, until the cherries have softened and released their juice and the liquid is a deep ruby color, about 5 minutes.
Pour the cherry mixture through a fine-mesh strainer set over a small bowl or measuring cup, pressing the solids firmly to extract as much syrup as possible. Discard the solids. Let the cherry syrup cool to room temperature, about 15 minutes.
