Tart, sweet, and brilliantly fizzy, this cherry lime soda is the kind of drink that makes a regular afternoon feel like a little celebration. The heart of it is a quick homemade cherry syrup β just fresh or frozen cherries, water, and honey simmered until the liquid turns a gorgeous deep ruby red. Straining out the solids gives you a silky, jewel-toned syrup that pairs beautifully with bright fresh lime juice and ice-cold sparkling water. Because every ingredient here is naturally free of gluten, there's no label-reading required and no concern about hidden additives sneaking in through flavored syrups or store-bought sodas. Pouring the sparkling water slowly down the side of the glass keeps every sip perfectly effervescent, so you get that satisfying fizz all the way to the bottom. Garnish with a lime wedge and a few fresh cherries and it looks almost too pretty to drink β almost.

Combine the pitted cherries, water, and honey in a small saucepan over medium heat. Cook, stirring occasionally and pressing the cherries gently with a spoon, until the cherries have softened and released their juice and the liquid is a deep ruby color, about 5 minutes.
Pour the cherry mixture through a fine-mesh strainer set over a small bowl or measuring cup, pressing the solids firmly to extract as much syrup as possible. Discard the solids. Let the cherry syrup cool to room temperature, about 15 minutes.
