Tart lime, sweet cherries, and a rush of bubbles β this homemade soda is the kind of drink that makes you wonder why you ever reached for a can. The cherry syrup is made from scratch by simmering fresh or frozen cherries with honey and a splash of water until the liquid turns a gorgeous, deep ruby color. Straining out the solids gives you a silky, concentrated syrup with nothing extra hiding in it β no additives, no stabilizers, no ingredients you'd need to look up. That matters more than you'd think, because most bottled sodas and flavored sparkling drinks rely on emulsifiers to keep their texture smooth and consistent. Here, the whole thing comes together with real fruit, fresh lime juice, and plain sparkling water, so every sip is exactly what it looks like. Pouring the sparkling water slowly down the side of the glass keeps the fizz alive, and a garnish of lime wedges and fresh cherries makes it feel genuinely special. It's refreshing, vibrant, and completely free of the processed shortcuts that make store-bought drinks a gamble.

Combine the pitted cherries, water, and honey in a small saucepan over medium heat. Cook, stirring occasionally and pressing the cherries gently with a spoon, until the cherries have softened and released their juice and the liquid is a deep ruby color, about 5 minutes.
Pour the cherry mixture through a fine-mesh strainer set over a small bowl or measuring cup, pressing the solids firmly to extract as much syrup as possible. Discard the solids. Let the cherry syrup cool to room temperature, about 15 minutes.
