This vibrant, herb-forward salad takes everything you love about classic tabbouleh and swaps in riced cauliflower for a lighter, more digestive-friendly base. The cauliflower gets pulsed in a food processor until it mimics the texture of couscous, then drained thoroughly so the final dish stays fresh and never soggy. Heaps of flat-leaf parsley and fresh mint bring bold, clean flavor, while cucumber, Roma tomatoes, and scallion greens add crunch and brightness without any heavy or hard-to-digest ingredients. The dressing is a simple shake of olive oil, fresh lemon juice, cumin, and turmeric — anti-inflammatory staples that also happen to taste incredible together. A short rest before serving lets the cauliflower soak up all that lemony goodness, so every forkful is deeply seasoned. A handful of pomegranate arils scattered on top at the end adds a jewel-like pop of sweetness that makes this as beautiful as it is nourishing. It works equally well as a light lunch on its own or as a colorful side that holds up well if you're prepping ahead.

Working in two batches, pulse the cauliflower florets in a food processor until broken down into pieces roughly the size of couscous, about 8–10 short pulses per batch. Do not over-process — stop when the pieces are uniform and no large chunks remain.
Transfer the riced cauliflower to a fine-mesh strainer or a clean kitchen towel. Sprinkle with 1/4 tsp salt, toss to combine, and let it drain for 10 minutes, then press or squeeze out as much moisture as possible. Transfer to a large mixing bowl.
