2 tbsp arrowroot starch
1 tsp baking soda
½ tsp fine sea salt
½ cup full-fat coconut milk
3 tbsp coconut oil, melted, plus more for brushing
1 tbsp apple cider vinegar

For the patties

1 lb ground beef (80/20)
Chef's tip
Ground chicken is often leaner than ground beef and can dry out more quickly. When browning it, add a little oil if needed and keep the pan juices unless the recipe says to drain them. Cook just until it reaches 165°F (74°C).
1 tsp garlic powder
½ tsp onion powder
½ tsp fine sea salt
¼ tsp ground ginger
6 strips uncured pork bacon, no added spices
Chef's tip
Turkey bacon is leaner and cooks faster - watch it closely and add a little oil if needed.

For the coconut cheese sauce

1 can (13.5 oz) full-fat coconut milk
2 tbsp arrowroot starch
2 tbsp nutritional yeast substitute (dried mushroom powder)
1 tbsp apple cider vinegar
½ tsp fine sea salt
¼ tsp ground turmeric

For serving

6 small butter lettuce leaves
½ small red onion, thinly sliced (optional)

Instructions

1
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
2
In a large mixing bowl, whisk together the cassava flour, arrowroot starch, baking soda, and salt for the buns. Add the coconut milk, melted coconut oil, and apple cider vinegar, and stir until a soft, slightly tacky dough forms. If the dough feels too sticky to handle, dust lightly with cassava flour.
