In a small bowl, combine the 2 tbsp kosher salt, 1 tbsp black pepper, smoked paprika, 1 tbsp brown sugar, garlic powder, onion powder, and cayenne. Pat the pork shoulder completely dry with paper towels, then rub the spice mixture all over the surface, pressing it into any crevices. Place the pork on a wire rack set inside a large roasting pan, cover loosely with plastic wrap, and refrigerate for at least 8 hours or overnight.
Remove the pork from the refrigerator and let it sit at room temperature for 45 minutes. Heat the oven to 300°F (150°C).
