Few drinks hit the way a properly made cappuccino does — that balance of bold espresso, silky steamed milk, and a thick cap of foam is genuinely hard to beat. This version is built entirely from finely ground espresso and cold whole milk, so there's nothing hiding in the cup that could cause a reaction for anyone avoiding tropical-derived ingredients. A lot of café drinks and flavored coffee syrups sneak in coconut milk, coconut sugar, or coconut-based creamers, but here you're working with just two clean, straightforward ingredients. The technique is the star: a carefully pulled double shot with a reddish-gold crema, paired with milk steamed to that sweet spot of 140–150°F where it turns glossy and almost velvety. Getting the foam right — equal thirds of espresso, steamed milk, and dense spooned foam — takes a little practice, but the instructions walk you through every step so you're not guessing. The result is a café-quality drink you made yourself, with full control over exactly what went into it.

Pre-warm a 6 oz ceramic cappuccino cup by filling it with hot water from the machine's steam wand or hot-water spout for 30 seconds, then discard the water.
