Oregano is fine during pregnancy in normal cooking amounts - this recipe uses about scant 1/4 tsp per serving. The caution is about concentrated oregano oil and large medicinal doses.







Preheat the oven to 425°F (220°C). Arrange the halved mini peppers cut-side up on a rimmed baking sheet, drizzle with the 1 tbsp olive oil, and season lightly with salt. Set aside.
Heat the garlic-infused olive oil in a large (12-inch) skillet over medium-high heat until shimmering. Add the diced red bell pepper and celery and cook, stirring occasionally, until softened, about 4–5 minutes.
