Bottled Cajun seasonings and flavored oils often sneak in synthetic flavor compounds that have no business being in your kitchen — this version skips all of that entirely. Every bit of heat, earthiness, and brightness here comes from real ingredients: smoked paprika, cayenne, dried and fresh herbs, and a hit of lemon zest and juice. Warming the olive oil gently with the dried spices coaxes out their natural oils, building a deeply fragrant base before the fresh parsley, chives, and thyme go in off the heat. The result is a glossy, rust-tinted oil that smells like a Louisiana kitchen and tastes like it, too. Strain it clean, let it rest, and you've got a finishing drizzle that elevates grilled proteins, crusty bread, roasted vegetables, or anything else that needs a bold, herby kick. It's the kind of condiment you'll want to keep a jar of on the counter at all times.

Combine the olive oil, smoked paprika, dried oregano, dried thyme, cayenne, black pepper, kosher salt, and celery salt in a small saucepan over low heat. Warm, stirring occasionally, until the oil is fragrant and the spices begin to sizzle gently at the edges, about 3–4 minutes. Do not let the oil smoke or the spices scorch.
Remove the saucepan from the heat and let the spiced oil cool for 5 minutes. Stir in the parsley, chives, fresh thyme leaves, lemon zest, and lemon juice.
