This bold, fragrant finishing oil is the kind of thing that makes everything it touches taste more intentional. Smoked paprika, cayenne, dried oregano, and thyme bloom gently in warm olive oil, building a deep, layered heat before fresh parsley, chives, lemon zest, and a squeeze of juice are stirred in off the heat. The result is bright, smoky, and just spicy enough to keep you reaching for more bread. Straining out the solids gives you a silky, jewel-toned oil that looks as good as it tastes drizzled over grilled proteins, roasted vegetables, or a simple bowl of pasta. Many store-bought flavored oils rely on blended bases or shared production lines that can introduce unexpected allergens, so making your own from scratch puts you fully in control of every drop. The whole process takes almost no effort and the payoff — a glossy, restaurant-worthy condiment — is completely out of proportion to the work involved. Keep a jar on the counter and you'll find yourself reaching for it constantly.

Combine the olive oil, smoked paprika, dried oregano, dried thyme, cayenne, black pepper, kosher salt, and celery salt in a small saucepan over low heat. Warm, stirring occasionally, until the oil is fragrant and the spices begin to sizzle gently at the edges, about 3–4 minutes. Do not let the oil smoke or the spices scorch.
Remove the saucepan from the heat and let the spiced oil cool for 5 minutes. Stir in the parsley, chives, fresh thyme leaves, lemon zest, and lemon juice.
