This simple, stunning side dish proves that the most satisfying food often comes from the fewest ingredients. Pearl onions are gently simmered until tender, then coaxed into a light golden glaze before sweet peas and a second knob of butter bring everything together in one bright, cohesive pan. Fresh thyme adds an herby lift, and a scatter of parsley at the end makes it look like something you'd order at a bistro. Every single ingredient here is naturally free of stimulants — no tea extracts, no hidden additives, just vegetables, butter, salt, and herbs doing exactly what they're supposed to do. It's the kind of dish that works beautifully alongside a roast, a grain bowl, or honestly just a good piece of crusty bread. The technique is straightforward enough for a weeknight but polished enough to earn a spot on a holiday table.

If using fresh pearl onions, bring a medium saucepan of water to a boil. Score a shallow X on the root end of each onion, then blanch for 1 minute. Drain in a colander and rinse under cold water until cool enough to handle. Pinch each onion at the stem end to slip off the skin. If using frozen pearl onions, skip this step — they are already peeled.
In a large skillet, combine the peeled pearl onions, ½ cup water, 1 tbsp of the butter, and the salt. Bring to a simmer over medium heat, then cover and cook until the onions are just tender when pierced with a knife, about 8–10 minutes.
