This simple side dish is proof that a handful of honest ingredients can produce something genuinely beautiful on the plate. Pearl onions and sweet peas come together in a buttery, herb-flecked skillet that feels both classic and effortless. The technique here is what makes it shine — the onions are gently simmered until tender, then the liquid cooks off so they pick up a light golden glaze at the edges, adding depth without any sweeteners or shortcuts. Fresh thyme and a finishing scatter of parsley keep everything bright and fragrant. It's the kind of vegetable dish that actually disappears at the dinner table. Every ingredient earns its place, and nothing sneaks in any unwanted sweetness — just butter, salt, and good produce doing exactly what they're supposed to do.

If using fresh pearl onions, bring a medium saucepan of water to a boil. Score a shallow X on the root end of each onion, then blanch for 1 minute. Drain in a colander and rinse under cold water until cool enough to handle. Pinch each onion at the stem end to slip off the skin. If using frozen pearl onions, skip this step — they are already peeled.
In a large skillet, combine the peeled pearl onions, ½ cup water, 1 tbsp of the butter, and the salt. Bring to a simmer over medium heat, then cover and cook until the onions are just tender when pierced with a knife, about 8–10 minutes.
