Most store-bought white bread is loaded with emulsifiers like mono- and diglycerides or DATEM, which are used to extend shelf life and improve texture but can be a real problem for anyone avoiding these additives. This homemade loaf skips all of that entirely — just water, butter, sugar, salt, bread flour, and yeast, nothing more. The bread machine does the heavy lifting, mixing and proofing and baking the dough through a single hands-off cycle while you go about your day. What comes out is a beautifully golden, pillowy loaf with a soft crumb and a satisfying crust that you simply won't find in a commercial bag. The trick of nestling the yeast into a small well in the flour, away from the salt, helps ensure a strong, reliable rise every time. Letting the loaf cool fully on a wire rack before slicing is worth the patience — it keeps the crumb light and airy rather than gummy. Once you've tasted a warm slice with a little butter, going back to the packaged stuff is going to feel like a serious downgrade.

Add the ingredients to the bread machine pan in the order listed: water, butter, sugar, salt, bread flour, and yeast. Make a small well in the center of the flour and pour the yeast into it, keeping the yeast away from the salt.
Insert the pan into the bread machine, select the Basic or White Bread cycle, choose your preferred crust color (medium is recommended), and press Start. The full cycle will run approximately 3 hours.
