A serving of up to about 1/4 cup of blue cheese is low in lactose. This recipe contains about 3 1/2 tablespoons per serving, which stays within that amount, so it is likely fine for many people. If you prefer to always avoid blue cheese, please tap it and change its rating to Red.





Heat the butter and olive oil in a large skillet over medium heat until the butter is melted and foamy. Add the sliced onions and 1/4 tsp salt, stirring to coat. Cook, stirring every few minutes, for 20–25 minutes until the onions are deep golden brown and very soft. Reduce the heat to medium-low if they begin to darken too quickly. Transfer to a bowl and set aside.
While the onions cook, cook the bacon in a separate large skillet over medium heat for 6–8 minutes, turning once, until the strips are crisp and deeply browned. Transfer to a paper-towel-lined plate. Pour off all but about 1 tsp of the bacon fat from the pan and reserve the pan for the burgers.
