Heat the butter and olive oil in a large skillet over medium heat until the butter is melted and foamy. Add the sliced onions and 1/4 tsp salt, stirring to coat. Cook, stirring every few minutes, for 20β25 minutes until the onions are deep golden brown and very soft. Reduce the heat to medium-low if they begin to darken too quickly. Transfer to a bowl and set aside.
While the onions cook, cook the bacon in a separate large skillet over medium heat for 6β8 minutes, turning once, until the strips are crisp and deeply browned. Transfer to a paper-towel-lined plate. Pour off all but about 1 tsp of the bacon fat from the pan and reserve the pan for the burgers.
