Chef's tip
Cook it only until crisp, adding a little oil to the pan - vegetarian bacon cooks much faster than pork bacon and can scorch. If the recipe simmers or bakes the bacon further, set it aside and stir it back in near the end.
4 slices sandwich bread
3 tbsp vegan mayonnaise
1 large tomato, sliced ¼ inch thick
4 leaves romaine or green leaf lettuce
salt and pepper, to taste

Instructions

1
Lay the bacon strips in a single layer in a large skillet over medium heat. Cook, turning once, until the fat is rendered and the strips are deep golden and crisp, 7–9 minutes total. Transfer to a paper-towel-lined plate to drain.
2
Toast the bread slices until golden and firm.
