Bison jerky is one of those snacks that feels almost primal — deeply savory, chewy, and packed with protein that actually keeps you full. The marinade here is built on coconut aminos, apple cider vinegar, honey, and a warm blend of garlic, ginger, turmeric, and Ceylon cinnamon, giving every strip a bold, complex flavor without relying on any of the spice-rack fillers that can sneak into commercial jerky blends. Store-bought jerky is notorious for containing mystery seasonings, and nutmeg is one of those background spices that shows up where you least expect it — so making your own is the cleanest way to stay in control. Bison top round or flank steak is leaner than beef, which means it dries beautifully and doesn't turn greasy or tough after a long oven session. A quick freeze before slicing makes it easy to get those thin, even strips that are the real secret to great jerky texture. Low and slow in the oven at 175°F does all the heavy lifting, and the result is a deeply browned, satisfying chew that holds up for weeks in the fridge or months in the freezer. Once you've made a batch yourself, it's genuinely hard to go back to the packaged stuff.

Place the bison in the freezer for 30–45 minutes, until firm but not frozen solid. This makes it much easier to slice thinly and evenly.
Using a sharp knife, slice the bison against the grain into strips about 1/8-inch (3mm) thick. For chewier jerky, slice with the grain; for more tender jerky, slice against it.
