Bison jerky is one of those snacks that feels indulgent but is actually doing a lot of good work — high protein, deeply savory, and completely satisfying to chew on. The real challenge with store-bought jerky for anyone avoiding nightshades is that most commercial blends lean heavily on chili powder, paprika, or cayenne, which are all off the table. This marinade sidesteps all of that by building bold, complex flavor from coconut aminos, apple cider vinegar, garlic powder, ginger, turmeric, and a whisper of Ceylon cinnamon — no peppers, no tomato-based sauces, nothing to second-guess on the label. The honey rounds everything out with just enough sweetness to balance the tang, and the long marinade time (up to 24 hours) means the flavor goes all the way through every strip. Bison is a leaner, slightly richer alternative to beef, and it takes beautifully to the low-and-slow oven method used here. The result is deeply browned, chewy-but-not-tough jerky that you can stash in the fridge for two weeks or the freezer for three months — which means batch cooking this once covers a lot of snack emergencies.

Place the bison in the freezer for 30–45 minutes, until firm but not frozen solid. This makes it much easier to slice thinly and evenly.
Using a sharp knife, slice the bison against the grain into strips about 1/8-inch (3mm) thick. For chewier jerky, slice with the grain; for more tender jerky, slice against it.
