Bison jerky from the store almost always comes loaded with preservatives, and that's exactly the problem this homemade version solves. By building the marinade entirely from whole-food ingredients — coconut aminos, apple cider vinegar, honey, and a warm blend of garlic, ginger, turmeric, and Ceylon cinnamon — you get deep, complex flavor without a single synthetic additive in sight. The low-and-slow oven method does the heavy lifting, slowly drawing out moisture over several hours until each strip is chewy, deeply savory, and satisfying in that way only good jerky can be. Bison is naturally leaner than beef, which means less fat to trim and a cleaner finished product that holds up beautifully in storage. The long marinade window — anywhere from eight to twenty-four hours — lets those bold spices really sink in, so every bite carries flavor all the way through. Once cooled, it keeps in the fridge for up to two weeks or the freezer for up to three months, making it a genuinely practical snack to batch-prep. This is the kind of recipe that makes you wonder why you ever bought the packaged stuff in the first place.

Place the bison in the freezer for 30–45 minutes, until firm but not frozen solid. This makes it much easier to slice thinly and evenly.
Using a sharp knife, slice the bison against the grain into strips about 1/8-inch (3mm) thick. For chewier jerky, slice with the grain; for more tender jerky, slice against it.
