This vibrant cocktail is everything a warm-weather drink should be — bright, bubbly, and just a little bit fancy without requiring any bartending experience. A quick homemade berry syrup made from fresh or frozen mixed berries gives the drink its gorgeous jewel-toned color and a natural sweetness that store-bought mixes simply can't match. Blanco tequila, freshly squeezed grapefruit juice, and a hit of lime juice bring that classic Paloma backbone, while a pinch of salt ties all the flavors together in the best possible way. The sparkling water gets poured gently down the side of the glass so every sip stays perfectly effervescent. Every single ingredient here is naturally free from tree nuts, so there's no label-scanning or substitution stress — just good, clean cocktail-making. Garnish with a handful of fresh berries and a citrus wedge and it looks like something you'd pay fifteen dollars for at a rooftop bar. Make a double batch of the berry syrup on the weekend and you'll be set for spontaneous happy hours all week long.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
