This cocktail is a vibrant, fruit-forward twist on a classic Paloma, built around a homemade berry syrup that brings deep, jammy color and natural sweetness to every sip. Fresh grapefruit juice and a squeeze of lime keep things bright and citrusy, while blanco tequila ties it all together with just enough edge. The berry syrup comes together in minutes on the stovetop — just simmer, strain, and you're ready to shake. A pinch of salt in the shaker is a small move that makes a big difference, rounding out the flavors and making the fruit pop even more. Topped with chilled sparkling water and garnished with fresh berries and a citrus wedge, it looks like something you'd order at a rooftop bar but costs a fraction of the price to make at home. Every ingredient here is straightforward and naturally free from tree nut concerns, so you can mix and serve with total confidence. It's the kind of drink that disappears fast, so consider doubling the syrup batch before your guests arrive.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
