This vibrant cocktail is a serious upgrade to the classic paloma, layering tart grapefruit and lime with a gorgeous homemade berry syrup that turns the whole drink a deep, jewel-toned pink. The syrup comes together in just minutes on the stovetop — fresh or frozen berries simmered with sugar and water until they collapse into something silky and intensely fruity. Straining out the solids gives you a smooth, glossy syrup that blends seamlessly with the blanco tequila and fresh-squeezed citrus. A pinch of salt ties everything together and makes the flavors pop in that way only a well-built cocktail can. Topped with chilled sparkling water and served over ice, it's refreshing and a little fancy without requiring any bartending experience. For anyone navigating legume-free living, cocktails are usually a safe zone, but store-bought mixes can sneak in unexpected additives — making this from-scratch approach the cleanest, most satisfying route. Garnish with a few extra berries and a citrus wedge and it looks like something straight off a restaurant menu.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
