This cocktail is bright, fruity, and seriously refreshing — the kind of drink that makes a warm afternoon feel like a proper occasion. A quick homemade berry syrup, built from fresh or frozen mixed berries simmered down with sugar and water, gives the whole thing a gorgeous jewel-toned color and a natural sweetness that no bottled mixer can match. Blanco tequila, freshly squeezed grapefruit juice, and a hit of lime bring that classic Paloma backbone, while a pinch of salt ties everything together in the best way. The syrup gets strained smooth before it ever hits the shaker, so you get pure, clean berry flavor in every sip. Topped with chilled sparkling water poured gently to keep those bubbles alive, it's effervescent and elegant without being fussy. Every ingredient here is straightforward and naturally free from tree nut concerns, so you can mix and serve with total confidence. Garnish with a few fresh berries and a citrus wedge and it looks like something you'd pay twelve dollars for at a rooftop bar.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
