This vibrant cocktail is everything a warm-weather drink should be — bright, bubbly, and just a little bit fancy without requiring any bartending skills. A quick homemade berry syrup made from fresh or frozen mixed berries gives the drink its gorgeous color and a natural fruity sweetness that store-bought mixes simply can't match. Blanco tequila, freshly squeezed grapefruit juice, and a splash of lime juice bring that classic citrusy backbone, while a pinch of salt ties it all together in the best way. Many spiced or flavored cocktail syrups sneak in unexpected ingredients, so making your own from scratch means you know exactly what's going in the glass. The whole thing comes together in minutes — simmer the syrup, shake with ice, top with sparkling water, and you're done. It's refreshing, stunning to look at, and genuinely crowd-pleasing whether you're hosting a brunch or just treating yourself on a Friday evening.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
