Bright, citrusy, and flushed with the deep color of fresh berries, this cocktail is the kind of drink that makes any occasion feel a little more special. A quick homemade berry syrup — just berries, sugar, and water simmered and strained — gives the whole thing a natural sweetness that store-bought mixers simply can't match. Blanco tequila, freshly squeezed grapefruit juice, and a squeeze of lime keep the flavor sharp and refreshing, while a pinch of salt ties everything together in the best way. Many flavored cocktail syrups and pre-made drink mixes rely on additives derived from animal collagen, so making your own syrup from scratch means you know exactly what's going in the glass. The sparkling water gets poured gently down the side of the glass to keep those bubbles alive all the way to the first sip. Finished with a handful of fresh berries and a citrus wedge, it's as gorgeous to look at as it is to drink.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
