This vibrant, fruit-forward cocktail is the kind of drink that makes any occasion feel like a celebration. A homemade berry syrup — simmered from fresh or frozen mixed berries, sugar, and water, then strained to a jewel-toned liquid — gives the whole thing a depth and color that no store-bought mix can touch. Blanco tequila, freshly squeezed grapefruit juice, and a hit of lime bring the classic Paloma backbone, while the berry syrup weaves in a lush, jammy sweetness that balances the citrus perfectly. A pinch of salt ties everything together in a way that genuinely elevates every sip. Cocktails can sometimes sneak in creamy liqueurs or flavored syrups loaded with dairy derivatives, but every single ingredient here is naturally plant-based, so there's nothing to second-guess. Top it off with chilled sparkling water poured gently down the side of the glass to keep those bubbles alive, and you've got a drink that looks as stunning as it tastes. Garnish with fresh berries and a citrus wedge and serve immediately — this one disappears fast.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
