This vibrant, fruit-forward cocktail is everything a warm-weather drink should be — bright, bubbly, and just a little bit fancy without requiring a trip to a specialty bar. A quick homemade berry syrup made from fresh or frozen mixed berries gives the whole thing a gorgeous jewel-toned color and a natural sweetness that store-bought mixes simply can't match. Blanco tequila meets freshly squeezed grapefruit juice and a hit of lime for that classic paloma backbone, while the sparkling water keeps every sip light and effervescent. The syrup comes together in under ten minutes on the stovetop, so you're not spending your whole evening in the kitchen. A pinch of salt ties all the flavors together in a way that sounds subtle but makes a real difference in the glass. Garnished with fresh berries and a citrus wedge, it looks stunning served up at a dinner party or just enjoyed on the porch on a slow evening. Completely plant-based and naturally free of any animal-derived ingredients, this is one of those drinks that everyone at the table can reach for without a second thought.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
