Bright, citrusy, and flushed with the deep jewel tones of real fruit, this berry paloma is the kind of drink that makes you feel like you're on a rooftop somewhere warm. The gorgeous pink-red color comes entirely from simmering fresh or frozen berries down into a quick homemade syrup — no dyes, no artificially colored mixers, no neon syrups from a bottle. That matters more than you might think, because most store-bought cocktail syrups and flavored sparkling waters sneak in synthetic colorants that are easy to overlook on a label. Here, everything earning its place in the glass is exactly what it says it is: blanco tequila, freshly squeezed grapefruit and lime juice, and that gorgeous berry syrup you made yourself in about five minutes. The salt ties the citrus together and gives the whole drink a slightly savory edge that makes it genuinely complex. Topped with chilled sparkling water and garnished with a wedge of grapefruit, it's refreshing, beautiful, and completely clean from start to finish.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
