When you want a cocktail that actually tastes like real fruit, this sparkling paloma delivers in the best way. The berry syrup is made from scratch by simmering fresh or frozen mixed berries with sugar and water, then straining out every last drop of vibrant, jewel-toned juice. No artificial flavors, no mystery syrups from a bottle — just pure berry sweetness that you made yourself in about five minutes. Fresh-squeezed grapefruit and lime juice bring the citrus punch, while blanco tequila and a pinch of salt round everything out into something that tastes genuinely bright and balanced. A gentle pour of chilled sparkling water over the top keeps the bubbles alive right up until the first sip. It's the kind of drink that looks stunning in a glass and tastes even better than it looks, especially with a few fresh berries floating on top.

Combine the berries, sugar, and water in a small saucepan over medium heat. Cook, stirring occasionally, until the sugar dissolves and the berries break down and release their juices, about 4–5 minutes. Remove from heat and let cool for 5 minutes.
Press the berry mixture through a fine mesh strainer into a small bowl or jar, pressing firmly on the solids to extract as much syrup as possible. Discard the solids. You should have about 3–4 tbsp of berry syrup.
