This vibrant mocktail is everything a summer drink should be — fruity, fizzy, and just a little bit fancy without requiring any bartending skills. A quick homemade berry syrup made from fresh or frozen berries, raw honey, and lemon juice forms the base, and it comes together in under ten minutes on the stovetop. Poured over ice and topped with chilled kombucha, the result is a beautifully layered drink with a gorgeous deep color and a bright, tangy flavor that feels genuinely special. Every single ingredient here is naturally free of wheat and gluten, so there's no label-scanning or substitution stress involved — just straightforward, wholesome components. The kombucha adds a lively effervescence along with its signature gentle tartness, which plays perfectly against the sweetness of the berry syrup. A few fresh mint leaves on top make it look like something you'd pay twelve dollars for at a rooftop bar. It's the kind of drink that works equally well for a lazy weekend brunch or as a crowd-pleasing option at a gathering where not everyone wants alcohol.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
