This vibrant mocktail is everything a refreshing drink should be — bright, bubbly, and packed with real fruit flavor. A quick homemade berry syrup made from mixed berries, raw honey, and fresh lemon juice forms the heart of the drink, giving it a depth that no store-bought mixer can match. Once that syrup is strained smooth and cooled, it gets layered over ice and topped with chilled kombucha for a gorgeous, effervescent finish. The gentle fizz of the kombucha plays beautifully against the sweet-tart berry base, and a few fresh mint leaves on top make it feel genuinely special. Every single ingredient here is naturally free from tree nuts, so there's no label-scanning or substitution stress involved — just clean, simple components that come together fast. It's the kind of drink that looks impressive enough for a dinner party but is easy enough to throw together on a weeknight. Serve it immediately so the bubbles stay lively and the colors stay stunning.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
