This vibrant mocktail is the kind of drink that makes people do a double-take when they realize there's no alcohol in it. A quick homemade berry syrup — built from fresh or frozen berries, raw honey, and a squeeze of lemon — gets strained until silky smooth, then topped with chilled kombucha for a fizzy, tangy finish that feels genuinely special. The natural effervescence of the kombucha does all the heavy lifting, so you get that satisfying sparkle without any spirits or mixers to second-guess. It's a smart choice when you want something festive and refreshing that everyone at the table can enjoy. Serve it over ice with a few fresh mint leaves and it looks like something straight off a cocktail menu. The whole thing comes together in under fifteen minutes, making it just as practical as it is impressive.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
