This vibrant mocktail is everything a refreshing drink should be — fruity, fizzy, and just a little fancy without requiring any bartending skills. A quick homemade berry syrup made from fresh or frozen berries, honey, and lemon juice forms the heart of the drink, delivering a bright, jammy sweetness that store-bought mixers simply can't match. Once strained smooth and poured over ice, it meets chilled kombucha for a naturally effervescent finish that feels celebratory in the best way. The gentle probiotic tang of the kombucha plays beautifully against the sweet-tart berry base, and a few fresh mint leaves on top make it look like something you'd order at a rooftop bar. Every single ingredient here is naturally free from tree nuts, so there's no label-scanning or substitution stress involved — just straightforward, wholesome components you likely already have on hand. It comes together in under fifteen minutes and works equally well as a weekend brunch sipper or a weeknight treat when you want something a little more special than plain sparkling water.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
