This fizzy, fruit-forward mocktail is the kind of drink that makes any occasion feel a little more special — no alcohol required. A quick homemade berry syrup made from fresh or frozen berries, raw honey, and lemon juice gives it a vibrant, jewel-toned base that store-bought mixers simply can't match. Once that syrup is strained smooth and cooled, chilled kombucha brings the bubbles and a gentle tang that ties everything together beautifully. Soy sneaks into a surprising number of packaged beverages and flavored drinks, but every ingredient here is naturally free of it — just fruit, honey, lemon, and plain kombucha. The result is bright, lightly sweet, and refreshingly tart with a gorgeous color that looks stunning over ice. A few fresh mint leaves on top make it feel downright elegant, whether you're serving it at brunch or just treating yourself on a weeknight.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
