This vibrant mocktail is everything a refreshing drink should be — fruity, fizzy, and just a little bit fancy without requiring any bartending skills. A quick homemade berry syrup made from mixed berries, raw honey, and fresh lemon juice forms the heart of the drink, delivering a bright, jammy sweetness that store-bought syrups simply can't match. Once strained smooth and poured over ice, it meets chilled plain kombucha for a naturally effervescent finish that feels celebratory in the best way. The gentle stir at the end keeps those bubbles alive, so every sip has that satisfying fizz. Grain sensitivities can make navigating drinks trickier than expected, since rye and other grains sneak into flavored kombuchas and packaged mixers more often than you'd think — but this recipe keeps things clean by calling for plain, unflavored kombucha and whole-food ingredients throughout. A few fresh mint leaves on top make it look like something you'd order at a rooftop bar, even if you're just standing in your kitchen. It's the kind of drink that works equally well for a weekend brunch, a dinner party, or an ordinary Tuesday when you just want something a little special.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
