This sparkling mocktail is bright, bubbly, and genuinely refreshing — the kind of drink that looks like it came from a trendy café but comes together in under fifteen minutes at home. A quick berry syrup made from fresh or frozen fruit, raw honey, and lemon juice forms the flavor base, and it's surprisingly rich and jammy once you strain out the solids. Poured over ice and topped with chilled kombucha, the whole thing fizzes up beautifully with a natural tartness that feels alive in the glass. The kombucha brings its signature effervescence and a subtle tang that plays perfectly against the sweetness of the berries. A few fresh mint leaves on top make it look effortlessly put-together for brunch, a dinner party, or just a quiet afternoon when you want something special without the alcohol. Since every ingredient here is plant-based and seafood-free, it fits naturally into a pescatarian lifestyle without any substitutions or workarounds needed.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
