This vibrant mocktail is the kind of drink that makes you feel like you're at a fancy brunch spot without ever leaving your kitchen. A quick homemade berry syrup — built from fresh or frozen berries, raw honey, and a squeeze of lemon — gets strained into a silky, jewel-toned base that pairs beautifully with fizzy chilled kombucha. The result is tart, lightly sweet, and refreshingly bubbly in a way that no store-bought mocktail can quite match. Because you're making the syrup yourself, you have complete control over every ingredient that goes into the glass, which is a real comfort when navigating labels and shared-facility warnings. The whole process is straightforward and low-effort, and the payoff is a gorgeous, restaurant-worthy drink. A few fresh mint leaves on top take it from weeknight treat to dinner-party showstopper.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
