This vibrant mocktail is everything a refreshing drink should be — bright, bubbly, and packed with real fruit flavor. A quick homemade berry syrup made from fresh or frozen berries, raw honey, and lemon juice forms the heart of the drink, giving it a depth that no store-bought mixer can match. Once strained smooth and poured over ice, it meets chilled plain kombucha for a fizzy, tangy finish that feels genuinely special. The gentle stir at the end keeps those bubbles alive, so every sip has that satisfying effervescence. Fresh mint on top is optional, but it adds a cool, aromatic lift that takes the whole glass up a notch. This is the kind of drink you can serve at a gathering or just make for yourself on a slow afternoon — no bar cart required, and no hidden spices to worry about.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
