This vibrant mocktail is everything you want in a refreshing drink — tart, lightly sweet, fizzy, and gorgeous in the glass. A quick homemade berry syrup made from mixed fresh or frozen berries, raw honey, and lemon juice forms the base, and it comes together in just a few minutes on the stovetop. Strained smooth and poured over ice, it mingles beautifully with chilled plain kombucha for a drink that feels genuinely special without any alcohol. The natural probiotics in the kombucha add a subtle tang that plays perfectly off the bright berry flavor. Optional fresh mint on top makes it look like something you'd order at a fancy brunch spot. Tree nut allergies can make packaged drinks and flavored kombuchas a real minefield, but this one is built entirely from whole, simple ingredients you control from start to finish. It's the kind of drink that impresses guests and satisfies a sweet craving all at once.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
