This vibrant mocktail is everything you want in a refreshing drink — jewel-toned, lightly fizzy, and bursting with real berry flavor. A quick homemade berry syrup made from fresh or frozen fruit, raw honey, and lemon juice gives it a depth that no store-bought mixer can match. The chilled kombucha brings a gentle effervescence and subtle tang that makes the whole thing feel a little fancy without any effort. Since it's built entirely from fruit, honey, and fermented tea, there's nothing here that would raise a flag for anyone avoiding legumes — just clean, straightforward ingredients. Pouring the kombucha gently over the syrup and ice keeps those bubbles alive, so every sip has that satisfying fizz. Finish it with a few fresh mint leaves and you've got a drink that looks like it came from a cocktail bar, ready in under fifteen minutes.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
