This fizzy, fruit-forward mocktail feels like something you'd order at a trendy café, but it comes together in your own kitchen with just a handful of real ingredients. The berry syrup is made by simmering fresh or frozen berries with raw honey and a squeeze of lemon juice — no corn syrup, no artificial sweeteners, just natural fruit and a touch of floral sweetness. That matters more than it might seem, because so many store-bought mocktail mixers and flavored sparkling drinks sneak in high fructose corn syrup to boost sweetness on the cheap. Here, the honey does that job beautifully while adding a depth of flavor you simply won't get from processed alternatives. Pouring chilled plain kombucha over the homemade syrup creates a gorgeous layered drink with a gentle tang and a satisfying effervescence — stir it just once so you keep those bubbles alive. A few fresh mint leaves on top make it look as good as it tastes. It's the kind of drink that works equally well for a weekend brunch, a dinner party, or just a Tuesday when you want something a little special.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
