Bright, tangy, and fizzing with fresh berry flavor, this mocktail is the kind of drink that makes any occasion feel a little more special — no alcohol required. A quick homemade berry syrup made from mixed berries, raw honey, and lemon juice gives it a depth that store-bought mixers simply can't match. The syrup gets strained until silky smooth, then layered over ice and topped with chilled kombucha for a gorgeous, effervescent finish. Stirring gently keeps those bubbles alive, so every sip has that satisfying fizz. Nut-free drinks can be surprisingly tricky to source at cafés and restaurants where syrups and garnishes sometimes hide unexpected ingredients, but every component here is straightforward and easy to verify. A few fresh mint leaves on top make it look like something you'd pay good money for at a trendy bar. It's refreshing, naturally sweetened, and genuinely impressive for guests.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
