Bright, tangy, and fizzing with color, this berry mocktail is the kind of drink that makes any occasion feel a little more special — no alcohol required. The homemade berry syrup is the real star here: a quick simmer of mixed berries, honey, and lemon juice transforms into a jewel-toned concentrate that's sweet, tart, and completely irresistible. Straining out the solids gives you a silky, vibrant base that layers beautifully under chilled kombucha for a drink that looks like it came from a craft cocktail bar. The gentle fizz of plain unflavored kombucha adds a probiotic punch and a lively effervescence that bottled sodas just can't match. Many store-bought mocktails and flavored drinks sneak in coconut water or coconut-derived ingredients, so making your own from scratch means you know exactly what's in the glass. A handful of fresh mint on top adds a cool, aromatic finish that ties the whole thing together. It's refreshing, naturally sweetened, and genuinely fun to make.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
