This vibrant mocktail is everything you want in a refreshing drink — tart, lightly sweet, beautifully pink, and fizzy in all the right ways. A quick homemade berry syrup made from mixed fresh or frozen berries, raw honey, and lemon juice gives it a depth of flavor that no store-bought mixer can match. Once strained smooth and poured over ice with chilled kombucha, the result is something that looks genuinely impressive without requiring any bartending skills. The gentle probiotic tang of the kombucha plays perfectly against the bright berry syrup, and a few fresh mint leaves on top make it feel like something you'd order at a fancy brunch spot. It's completely free of any animal proteins, so there's zero concern about hidden ingredients sneaking in — just clean, plant-forward components you can feel good about. Make it for a crowd by scaling up the syrup ahead of time and keeping it in the fridge until guests arrive.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
