This vibrant mocktail is everything you want in a refreshing drink — tart, lightly sweet, and beautifully fizzy with a deep berry color that looks stunning in the glass. A quick homemade berry syrup made from fresh or frozen fruit, raw honey, and lemon juice forms the base, and it comes together in just a few minutes on the stovetop. Poured over ice and topped with chilled kombucha, the result is a bubbly, layered drink that feels genuinely special without any alcohol or artificial flavors. Tree nut allergies can make store-bought drinks and flavored kombuchas a minefield of vague labeling, but every ingredient here is straightforward and easy to verify. The gentle stir at the end keeps those kombucha bubbles alive so each sip stays effervescent all the way to the bottom of the glass. A few fresh mint leaves on top add a cool, aromatic finish that takes it from casual to cocktail-hour worthy.

Combine the berries, honey, lemon juice, and water in a small saucepan over medium heat. Cook, stirring and pressing the berries with the back of a spoon, until the berries have broken down and the mixture is syrupy, about 4–5 minutes.
Pour the berry mixture through a fine-mesh strainer set over a small bowl, pressing firmly on the solids to extract as much liquid as possible. Discard the solids. Let the berry syrup cool to room temperature, about 5 minutes.
